Papa Fiasco's favorite oatmeal cookies. ======================================= The ingredients: 1 cup butter 1 cup packed brown sugar 1/2 cup granulated white sugar 2 eggs 1 teaspoon vanilla 1 1/2 cups white flour 1 teaspoon baking soda 1 teaspoon cinnamon (to taste) 1/2 teaspoon salt (optional) 3 cups old fasioned oatmeal 1 cup dark raisins Optional (but recommended) ingredients: 1 cup raw sunflower seeds Substitute 1 cup whole wheat flour for 1 cup white. 1/4 cup good honey The instructions: Take out the butter and let it soften at room temperature. Heat the oven up to 350 degrees. Add the sugars and honey to the butter in a bowl and beat until smooth and creamy, then add the eggs and vanilla and mix well. Slowly add the combined flour, cinnamon, salt and baking soda and mix them well together. Then add the oatmeal, raisins and sunflower seeds. After it's all well mixed, drop cookies onto cookie sheets by a good rounded tablespoon. Bake these in the oven for 10 to 15 minutes. Let them cool a minute or two on the sheet before sliding them onto a wire rack for cooling. Let them cool completely before placing them into a container! Comments: We like to add raw sunflower seeds to many of our recipes. If you don't like them, leave them out, but they taste great and just about nothing is as healthy for you! You could also add chopped nuts along with or in place of the seeds. Be creative! If you like the taste of rye, you can substitute 1/2 cup of rye flour for 1/2 cup white. Then substitute molasses for the honey. It won't be quite as sweet and have a rye-bread type flavor. You'll also see honey in just about all our baking. It adds a bit of flavor, helps preserve whatever it's in and it's healthy for you! It's the white sugar that makes the cookies crispy. If you want a chewier cookie, don't use white sugar! I don't use margarine in my recipes because it makes me sick (really). If you don't mind it, you could substitute. My favorite cookie sheets are the stainless steel, double sided ones. They have two sheets with air in between, but sealed all around. You can't burn a cookie on one of these sheets, unless you really try! These cookies are great when still warm and even better after they cool off and get crunchy. Try it, cook, eat, enjoy!
